Banana Bars with Cream Cheese Frosting and Peanut Butter Whip

Got some overly ripe bananas laying around? Before you toss ‘em, consider whipping up some of these babies instead.

Ingredients:

Bars:

  • 1/2 cup butter, softened

  • 2 cups sugar

  • 3 large eggs, room temperature

  • 1-1/2 cups mashed ripe bananas (about 3)

  • 1 teaspoon vanilla extract

  • 2 cups flour

  • 1 tsp baking soda

  • 1/2 tbsp. cinnamon

  • Dash of salt

  • 1/2 cup chopped walnuts (optional)

Frosting:

  • 8 oz cream cheese, softened

  • 1/2 cup butter, softened

  • 4 cups powdered sugar

  • 2 tsp vanilla extract

Topping suggestions:

  • Peanut butter whip

    • 3 parts whipped cream

    • 1 part peanut butter

  • Strawberry slices

  • Banana slices

  • Chopped walnuts

  • Chocolate sauce

Instructions:

  • Using a stand mixer (or hand mixer), cream butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, mashed bananas, and vanilla.

  • In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Stir in dry ingredients into wet ingredients on low speed until just combined.

  • Transfer mixture to a greased 15” x 10” baking dish. Bake at 350°F for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let cool for about an hour before frosting.

  • For the cream cheese frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until smooth. Frost bars.

  • To make the peanut butter whip, whisk together 1 part creamy peanut butter to 3 parts whipped cream.

  • Top bars with any (or all) of the following: peanut butter whip, strawberry/banana slices, chopped walnuts, drizzle of chocolate sauce.
