Banana Bars with Cream Cheese Frosting and Peanut Butter Whip
Got some overly ripe bananas laying around? Before you toss ‘em, consider whipping up some of these babies instead.
Ingredients:
Bars:
1/2 cup butter, softened
2 cups sugar
3 large eggs, room temperature
1-1/2 cups mashed ripe bananas (about 3)
1 teaspoon vanilla extract
2 cups flour
1 tsp baking soda
1/2 tbsp. cinnamon
Dash of salt
1/2 cup chopped walnuts (optional)
Frosting:
8 oz cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar
2 tsp vanilla extract
Topping suggestions:
Peanut butter whip
3 parts whipped cream
1 part peanut butter
Strawberry slices
Banana slices
Chopped walnuts
Chocolate sauce
Instructions:
Using a stand mixer (or hand mixer), cream butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, mashed bananas, and vanilla.
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Stir in dry ingredients into wet ingredients on low speed until just combined.
Transfer mixture to a greased 15” x 10” baking dish. Bake at 350°F for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let cool for about an hour before frosting.
For the cream cheese frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until smooth. Frost bars.
To make the peanut butter whip, whisk together 1 part creamy peanut butter to 3 parts whipped cream.
Top bars with any (or all) of the following: peanut butter whip, strawberry/banana slices, chopped walnuts, drizzle of chocolate sauce.
