Bread and Butter Pickles
I’m going to be honest…
I don’t even like bread and butter pickles. I’ve always been a dill gal. My husband and I would always argue which is better. He is loyal to the bread and butter, but I refused to hop on board… unnnntil now! Our garden has been producing in full force, and what better way to make use of our cucumber bounty than by making pickles?! Not to be biased, but this is the first time I’ve actually eaten and enjoyed bread and butter pickles. So here’s what the hubby and I came up with.
Ingredients
12 pickling cucumbers, sliced about 1/4” thick
1 large sweet onion, thinly sliced
1 large red bell pepper, thinly sliced
12 cloves of garlic, roughly chopped
1/4 cup salt
2 cups apple cider vinegar
2 cups sugar
1 tablespoon mustard seed
3/4 teaspoon celery seed
1/4 teaspoon whole cloves
1/2 tablespoon ground turmeric
1-2 jalapenos, sliced (optional)
Instructions
In a large bowl, mix together the cucumber slices, onion slices, bell pepper slices, garlic, and salt. Let sit for at least 1 hour.
In a large saucepan, mix together apple cider vinegar, sugar, celery seed, mustard seed, whole cloves, and turmeric. Bring to a boil.
Drain liquid from the cucumber mixture, then stir the cucumber mixture into the boiling vinegar mixture. Allow mixture to heat back up, and remove from stove just before it begins to boil again.
Transfer mixture into clean jars or containers.
*Optional: add jalapeno slices to jars along with the mixture if you want your pickles a little spicy.
