Cheesy Potatoes Foil Pack

From yard to table is my favorite way to cook.

I hate grocery shopping, or any form of shopping, with a passion. So now that our garden is in full bloom, I’ve managed to go well over a month without going to the store for groceries. Instead, I walk to my front yard. Between our fresh eggs laid daily by our lovely hens, our freezer full of fish we’ve caught and lamb meat from my father-in-law’s farm, and our two large gardens, I’ve been able to avoid the dreaded task of grocery shopping. Small victories, I tell ya.

A simple and delicious side dish for your cookout.

This Cheesy Potatoes Foil Pack is perfect for simultaneously grilling your meat directly on the grates and potatoes on the top rack of your grill. I’ve found that using a foil pan, rather than just foil, makes for less sticking and easier serving.

Ingredients

  • 7 large potatoes, diced

  • 1 medium onion, diced

  • 2-3 strips cooked bacon, cut into small pieces (optional)

  • 1/2-3/4 tbsp. olive oil (or bacon grease)

  • 1/2 tbsp. garlic powder

  • Salt and pepper, to taste

  • 2 tbsp. butter

  • 1 cup shredded cheddar cheese

  • 2 green onions, diced

Instructions

  • Drizzle olive oil (or bacon grease if you’re using bacon) into a large foil pan. Add in the diced potatoes and onions. Sprinkle on the garlic powder, salt, and pepper. Gently stir until the potatoes and onions are all coated with oil, then cover the pan with foil.

  • Place the covered foil pan with potato mixture onto the top rack of your grill and cook on medium heat. Gently stir occasionally to make sure potatoes don’t stick to the bottom of the pan.

  • After about 20 minutes, prick the potatoes with a fork or knife to check on their progress. Once they become tender, turn grill heat to low and add the following:

  • Optional: If you’re using bacon, stir in the cooked bacon pieces at this time

  • Add 2 tbsp. butter to the potatoes. Then sprinkle on the shredded cheddar cheese and let melt for 5-10 minutes.

  • Remove from heat and sprinkle with diced green onions just before serving.
