Zucchini Bread with Streusel Topping

Zucchini season is just about wrapped up for the year, but if you still have a couple of stragglers, here’s a simple yet delicious recipe for classic zucchini bread.

Ingredients

  • 3 cups flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 3 tsp ground cinnamon

  • 3 eggs

  • 1 cup vegetable oil

  • 2-1/4 cups sugar

  • 1 tbsp. vanilla extract

  • 2 cups shredded zucchini

  • 1 cup chopped walnuts

For the streusel topping:

  • 1/4 cup brown sugar

  • 3 tablespoons flour

  • 3 tablespoons cold butter, cut into small squares


Instructions

  • Preheat oven to 325F

  • Grease and flour two 9x5 loaf pans

  • In a medium sized bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon

  • In a separate bowl, beat together eggs, oil, vanilla extract, and sugar

  • Gradually add the dry ingredients into the wet ingredients

  • Beat until well combined

  • Add in the shredded zucchini and chopped walnuts

  • Gently stir in the zucchini and walnuts until combined

  • Pour batter into prepared pans. Tap each pan on the counter to release any air bubbles.

  • To make the streusel topping, whisk together the brown sugar and flour in a small bowl. Add in cold butter chunks. Using a pastry cutter, cut the butter into the brown sugar/flour mixture until it resembles course crumbs.

  • Sprinkle streusel crumbs onto the batter

  • Bake for 45-60 minutes or until toothpick inserted into center comes out clean
