Zucchini Bread with Streusel Topping
Zucchini season is just about wrapped up for the year, but if you still have a couple of stragglers, here’s a simple yet delicious recipe for classic zucchini bread.
Ingredients
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup vegetable oil
2-1/4 cups sugar
1 tbsp. vanilla extract
2 cups shredded zucchini
1 cup chopped walnuts
For the streusel topping:
1/4 cup brown sugar
3 tablespoons flour
3 tablespoons cold butter, cut into small squares
Instructions
Preheat oven to 325F
Grease and flour two 9x5 loaf pans
In a medium sized bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon
In a separate bowl, beat together eggs, oil, vanilla extract, and sugar
Gradually add the dry ingredients into the wet ingredients
Beat until well combined
Add in the shredded zucchini and chopped walnuts
Gently stir in the zucchini and walnuts until combined
Pour batter into prepared pans. Tap each pan on the counter to release any air bubbles.
To make the streusel topping, whisk together the brown sugar and flour in a small bowl. Add in cold butter chunks. Using a pastry cutter, cut the butter into the brown sugar/flour mixture until it resembles course crumbs.
Sprinkle streusel crumbs onto the batter
Bake for 45-60 minutes or until toothpick inserted into center comes out clean
Let bread cool for at least a half hour before enjoying :)
